The Swan House Hotel in is a beautiful boutique hotel located in the picturesque village of Beccles in Suffolk. The challenge that Elite Foodservice Design had was to take a very small existing kitchen with nothing more than one old six burner gas range and transform it into a modern efficient facility capable of producing a high quality local fish based menu for 40 covers!!

The solution was to turn off the gas completely and upgrade the electrical supply into the kitchen and introduce efficient cooking technology, immediately taking the unwanted heat out of the working area,..

Utilise a modular four zone high power induction hob with mirror plancha, slim line high power double fryer, salamander and a new ten grid Rational self cooking centre. We spent two days solid training the chef how to get the most out of his Rational and he is now pan frying five different types of fish across ten shelves, each shelf with a different cooking programme. Incredibly efficient and fabulous cooking results.

We maxed out on possible refrigerated prep storage by building in an Adande multifunction refrigerated drawer unit under continuous bespoke work tops and arranged the internal containers for the perfect storage of filleted fish.

Small kitchens are often very challenging areas to design, but all the more satisfying when you get it right.
