Elite Foodservice Design is proud to unveil our latest project: the design and installation of the open kitchen at Bellota, a new chef’s table restaurant in Bury St Edmunds. Led by the accomplished husband-and-wife team of Chef Rubén Aguilar Bel and Pastry Chef Gabriella Fogarasi, Bellota offers an immersive dining experience where guests can witness their meals being prepared in real-time. The restaurant centers around a 20-seat oak chef’s table, fostering interaction between chefs and diners in a setting that combines rustic Spanish charm with industrial elegance.

A Collaborative Vision

Our collaboration with Rubén and Gabriella spanned several months, focusing on creating a bespoke kitchen that balanced creativity with budget considerations. By integrating standard, off-the-shelf units in innovative ways, we achieved a custom look without the high costs typically associated with fully bespoke installations.

Seamless Integration of Equipment

The kitchen features Electrolux 700XP cooking equipment, chosen for its robust performance, sleek design, and durability. To maintain a cohesive aesthetic, we cleverly integrated Foster and Adande refrigeration units with bespoke stainless steel fabrications, creating preparation stations that appear as single, seamless pieces. This approach not only enhances the visual appeal but also ensures functional efficiency.

Live Culinary Artistry

Gabriella's wonderful bakery creations are prepared and baked in full view of the guests using a Rational combination oven. Known for its versatility, the Rational oven allows for precise control over baking conditions, ensuring consistent quality. The preparation area, equipped with integrated refrigeration, a preparation sink, and a marble worktop, provides an ideal space for crafting pastries that delight both the eyes and the palate.

Culinary Excellence on Display

Bellota's open kitchen design places culinary artistry at the forefront. Diners are seated around the kitchen at a rustic counter, surrounded by a harmonious blend of industrial and traditional Spanish architectural elements. The menu showcases dishes prepared using sous vide techniques, with final touches added on a charcoal grill and oven, delivering unparalleled flavours and textures.

From made-to-measure stainless steel fabrications to the thoughtful layout that facilitates seamless workflow, our design ensures that the kitchen not only meets the highest standards of functionality but also contributes to an award-winning dining environment.
