Sculthorpe Mill Fakenham

In early 2021, sisters Siobhan Peyton and Caitriona Peyton, from the iconic Atlantic Bar and Grill, Mash micro-brewery and Peyton and Byrne Café Bakeries, approached EFD to recreate their commercial new kitchen area at the Sculthorpe Mill in Fakenham.

A watermill built atop the River Wensum in 1757 and a beautiful country pub, set in the heart of the glorious Norfolk countryside was to be refurbished to create a haven for pub lovers and foodies.

We worked closely with executive Chef Elliot Ketley, previously based at the Soho House Group and The Square, to refurbish and renovate the existing kitchen area to utilise the small kitchen space to create an environment for him and his new team to serve an indulgent restaurant menu, classic bar menu and food for the Mill’s exciting new Garden Kitchen.

Utilising the existing extraction system, we decided to convert the existing gas cookline to a high-efficiency all electric range, featuring Lincat induction, chargrill, solid top and deep fat fryer. This would all be backed up with localised undercounter refrigeration counters and a 10-grid Rational oven. Due to spatial allowance, we positioned the Rational close to the main cookline, underneath an UltraVent recirculation canopy.

A new dish and glasswash room was created in an external store to maximise this area solely for preparation and service.

Whilst it was decided to repair the existing vinyl floor rather than replace, we did decide to fit the full kitchen out in Altro Whiterock wall cladding to create a hygienic and easy to clean/maintain environment.

An outdoor kitchen in the south facing garden was also created around a stunning pergola and was fitted out with a BBQ, charcoal oven, refrigeration and preparation surfaces. The space is a perfect summer suntrap and an ideal pace to enjoy an evening meal alfresco, or even just a crisp glass of rosé as you listen to the rush of the river or the buzzing of bees in the flower garden.
